安康魔芋既具有魔芋本身的保健功能和高粘度高持水性等加工特性,又富含人体必需的微量元素硒,富硒魔芋产业开发的条件得天独厚。安康魔芋产业在国内虽具有基地、加工、市场和技术优势,但仍存在优良品种缺乏,病害发生严重,加工产品技术含量低,科研投入不足和人才缺乏等问题。为推动安康市富硒魔芋产业持续健康发展,提出了在富硒魔芋种植上选育优良品种,建设种芋基地,研究病害机理,控制病害发生,制定技术标准,探索产业模式;在加工上研究低硫魔芋片生产工艺,研发富硒保健食品、医药保健制品、魔芋副产品综合利用和提高魔芋产品硒含量技术等发展对策。  相似文献

Chinese traditional fermented foods have a very long history dating back thousands of years and have become an indispensable part of Chinese dietary culture. A plethora of research has been conducted to unravel the composition and dynamics of microbial consortia associated with Chinese traditional fermented foods using culturedependent as well as culture-independent methods, like different high-throughput sequencing (HTS) techniques. These HTS techniques enable us to understand the relationship between a food product and its microbes to a greater extent than ever before. Considering the importance of Chinese traditional fermented products, the objective of this paper is to review the diversity and dynamics of microbiota in Chinese traditional fermented foods revealed by HTS approaches.  相似文献

茶多酚是茶叶中多酚类物质的总称,在食品、油脂、保健、医药、日化、精细化工等领域都有广泛的应用。茶多酚的提取和应用研究成为国内外开发“绿色工程”的热门课题之一。本文研究的内容是茶叶中茶多酚的提取与测定,主要目的是测定茶叶在不同条件下荼多酚的含量,然后相互比较。例如:茶汤放置时间,泡茶次数及pH对茶多酚含量的影响。随着人们保健意识的增强,都希望自己每日饮用的茶水中的茶多酚的含量多一些,因此我们研究了不同条件下从茶水中获得茶多酚的最佳条件。  相似文献

ABSTRACT: The objective of this paper was to describe some major changes made in an experimental foods course by incorporating active and cooperative learning techniques and a student research project. An interactive learning environment for dietetics, food science, and nutritional science students was designed in Project LEA/RN (Learning Enhancement Action/Resource Network). Group activities and 15-min lectures replaced 50-min lectures. Quizzes and out-of-class assignments replaced written examinations. A group laboratory project replaced individual reports. The average class score (85.6%) was better than previous semesters (81.5%). Increased interaction improved students' abilities to solve problems in food science and to articulate oral and written critiques of research results.  相似文献

The goal was to identify factors that might affect likelihood of seeking health-related interventions for young adults with adverse childhood experiences (ACEs). We tested whether ACEs were associated with (1) regulatory focus (tendency toward promoting good outcomes versus preventing bad outcomes), and (2) patient activation (the intention to take active charge of one’s health). We further tested whether promotion and prevention and patient activation were associated with each other and with health. Students at a public university (N = 321) completed online questionnaires assessing ACEs, regulatory focus, patient activation, and health. Greater childhood adversity showed small but significant associations with being a less activated patient and being less focused on promoting good outcomes. In contrast, greater childhood adversity had a much stronger association with focusing on preventing negative outcomes. Students with a more significant mental health history were more likely to have been exposed to childhood adversity, to be less activated patients, and to focus more on prevention. Results suggest that using a prevention focus may be effective in health messages aimed to reach individuals with high levels of ACEs. Furthermore, individuals with high levels of ACEs may benefit from interventions aimed at increasing patient activation.  相似文献

The inclusion of a representative sample of understudied populations (e.g., women, minorities, older adults, youth, and people with disabilities) in physical activity promotion studies is a public health priority. Given the limited empirical evidence of effective recruitment strategies and limitations in research methodology for both over represented and understudied populations, the purpose of this paper was to overview the effectiveness of different recruitment techniques derived from active and/or passive approaches among mainly under represented populations. Additionally, recommendations for effective recruitment methods are proposed considering such factors as demographic characteristics and target population. Effective recruitment methodology among all people—regardless of age, ethnic background, functional level, or gender—is important for determining the generalizability of study findings.  相似文献

ABSTRACT: Researchers and educators call for educational programs that teach youth about food safety. In this study, researchers used qualitative research methods (interviews and concept mapping) to ascertain elementary students' understandings of food spoilage and preservation benchmarks based on national science education standards. Constructivist learning theory and its attendant qualitative methods framed the study. Few students understood the causes of spoilage and most were unable to discuss the role of bacteria or germs in meat. Students with an understanding of microorganisms clearly explained methods of preventing spoilage, while students who did not understand the microorganism concept could not. Constructivist research methods were fruitful in unearthing students' conceptions related to food spoilage. This research has implications for university food science faculty members interested in strengthening their teaching practice by focusing on helping students develop conceptual understanding.  相似文献
