目的:研究桔皮果胶的最佳提取工艺条件,制作桔皮糕产品.方法:以桔皮果胶提取得率为考察指标,采用正交实验法考察提取液PH值、提取温度、提取时间、料液比等因素对提取效果的影响.结果:桔皮果胶的最佳提取工艺条件为pH值1.5、提取温度80℃、提取时间70m in、料液比1:20.结论:此最佳工艺可用于柑桔皮果胶的提取,果胶提取得率达18.6%.以该工艺提取的果胶为主料,添加白糖、柠檬酸、CMC-Na等辅料,可制得口感、色泽、质地良好的桔皮糕产品. 相似文献

为确定从菜西瓜中提取果胶的最佳工艺条件，以山西省临汾市菜西瓜为材料，采用酸法进行了提取果胶的试验研究。正交试验结果表明：在萃取时间为45min的前提下，从瓜瓤中提取果胶最佳工艺条件为加水量为原料重量的4倍，85℃下，添加原料重量0.3%的多聚磷酸钠，果胶得率可达2.03%；从外果皮中提取果胶，加水量为原料重量的4倍，75℃下，添加原料重量0.7%的多聚磷酸钠，果胶得率可达2.98%。 相似文献
