This study qualitatively explores expertise as a critical resource on which quality teaching depends. The study sample is comprised of six South African schools from the poorest poverty quintiles achieving relatively higher and lower academic outcomes. From interview data gathered over three years with teachers and other school staff, findings reveal significant differences between schools in the kinds of expertise that circulate in teacher communities. Remediation strategies that support student learning at specific levels of complexity stand out as a significant form of expertise. In schools performing above demographic expectations, teachers have more opportunities to access knowledge as an instructional resource, enabled by the recognition of differences in expertise. The study offers insight into what kinds of pedagogic strategies might disrupt educational inequalities and support the quality of teaching and learning within a system of scarce resources.  相似文献

ABSTRACT: Freezing is a key food processing and preservation technique widely used in the food industry. Application of best freezing and storage practices extends the shelf‐life of foods for several months, while retaining much of the original quality of the fresh food. During freezing, as well as its counterpart process, thawing, a number of critical physiochemical processes take place, including freeze concentration and freezing‐point depression. As a start to understanding the complexities associated with frozen foods, Food Science students should be able to describe and explain what occurs during the freezing and thawing of an aqueous solution. A modern cooking technique, gelatin‐filtered consommé, illustrates all of the phenomena associated with the freezing and thawing processes in a memorable, edible, hands‐on fashion.  相似文献

ABSTRACT:  Freezer burn is a common problem that significantly affects the color, texture, and flavor of frozen foods. Food science students should be able to clearly explain the causes and consequences of freezer burn. However, it is difficult to find a modern, detailed, accurate, yet concise, explanation of the mechanism and factors influencing the rate of freezer burn, suitable for classroom use. Thus, the purpose of this article is to provide students and instructors alike with such an explanation, replete with visual explanations, including 2 short animations. The animations, in QuickTime format, are available as supporting information and can be downloaded for free educational use.  相似文献

As educators of future law enforcement and social service personnel, one of the most important objectives of faculty members within the social sciences disciplines is to foster a sense of empathy toward victims of crime among their students. Empathy toward victims of crime, and domestic abuse in particular, is vastly important as evidence suggests that the reactions survivors encounter upon disclosure influences reporting behavior to law enforcement. Moreover, evidence indicates that by fostering empathy toward domestic abuse survivors among students, social science educators can reduce the endorsement of harmful victim-blaming attitudes that these individuals may otherwise carry with them into their public service. However, despite the importance concerning teaching empathy within the classroom, a dearth of information exists—particularly in the criminal justice pedagogical literature. To address this gap, the objective of this study was to assess several active learning activities designed specifically to foster victim empathy in students. To gather feedback about how these activities affected students, we utilized standard Likert scales as well as several free response questions.  相似文献
