民族地区畜产品加工学实验教学中的问题与改革探索

摘    要:畜产品加工学是食品科学与工程类本科专业的选修课程之一,由理论课和实验课两部分构成,具有很强的应用性和实践性。本文以吉首大学为例,分析了民族地区高校在畜产品加工学实验教学中遇到的问题,并结合湘西地区畜产品加工产业情况对该课程实验教学部分进行了改革和调整,实现了丰富畜产品加工学实验教学内容、创新实践教学方式、培养高质量专业技术型人才的目标。

Problems and Reforms in Experimental Teaching of Animal Products Processing in Ethnic Regions

Abstract:Animal products processing is one of the elective courses for food science and engineering undergraduates.It consists of theoretical and experimental parts and has distinct characterizations of application and practicality.In this paper,Jishou University being taken as an example,the problems encountered by colleges and universities in ethnic regions in the experimental teaching of animal products processing were analyzed,and the reform and adjustment of the course had been made taking the situation of the animal products processing industry in the western Hu'nan region into consideration.Through the reform and adjustment,the experimental contents of animal products processing are enriched,the practical teaching methods being innovated,the goal of cultivating high-quality professional and technical talented persons being achieved.
