摘    要:阐述了HACCP在奶酪生产中的应用,通过对奶酪生产过程进行危害分析(HA),介绍了奶酪生产中常见的质量问题,确定关键控制点(CCP),并制定了关键限值、监控体系的HACCP计划,以期为HACCP体系在奶酪中的应用提供理论依据.

Abstract:Based on the hazard analysis in the production of cheese,this essay studies the application of HACCP in producing cheese,introduces the quality problems,determines critical control points,and formulates a HACCP program of correspond-ing control value and monitor system,in order to provide reference to the application of HACCP system in cheese processing.
