酒店与餐饮管理专业课程考试改革的尝试

摘    要:本文提出了高职教育考试改革的一个新内容,即学生综合能力的考核。本文认为,对一门课程单独进行以期末考试为主的考核不能准确反映学生的综合能力,提出了将若干门专业课(其中包括专业理论课和专业技能课)的考核内容组合起来进行考核的综合考核,同时还以深圳职业技术学院旅游系酒店与餐饮管理专业的考试改革为例,探讨了将课程考核要求与行业需要结合起来、将考核内容设计成类似酒店企业实际生产与服务项目的全面综合考核形式,并对具体实施过程进行了说明。

Abstract:The authors mention that the traditional form of examination, in which the knowledge and skills of one course are solitarily examed at the end of a term, could not reflect the real aptitude of students, especially the real synthetic professional ability. Meanwhile, the essay makes the reformation in the Major of Hotel and Restaurant Management as an example and puts forward that the new type of examination, Synthetic Project Mode of Examination, in which the knowledge and skills of several courses including theoretical and technological courses have been integrated with each other, should be designed like the real tasks of manufacturing and serving in most hospitality enterprises.
