论江苏境内的地方菜肴风味

摘    要:江苏省区内的饮食文化研究在新时期有了长足的进展,存在的分歧意见主要是对江苏省境内饮食文化的区域划分、饮食文化的形成渊源、地区的辐射力大小、核心区域所在地等有不同见解。江苏境内的四大风味菜可以称得上“菜系”的只有淮扬菜和苏锡菜;江苏境内的菜系划分与方言区有密切关系;从对全国乃至全世界的历史和现实影响分析,江苏菜的代表应是淮扬菜,淮扬菜的代表是扬州菜。

Abstract:There has been good progress in the research into cooking culture within the boundaries of Jiangsu province,but exist disagreements mainly on its region division and its origin of formation,its local radiant power and the site of core region.There are four flavor dishes within the boundaries of Jiangsu,among which Huaiyang food and Suxi food can be called Cuisine.The division of cuisine in Jiangsu area is closely related to the dialect regions.From analyzing the historical and realistic influence on China and even the whole world,the representative flavour of Jiangsu food should be Huaiyang Cuisine and the one of Huaiyang Cuisine should be Yangzhou food.
