摘    要:元人忽思慧所撰《饮膳正要》为元代食品学和营养学专著,对食物种类、食物特性,饮食禁忌和医疗功效及饮食理念有较为详细的论述,为颇具价值的古代食谱和食疗典籍,有助于了解我国古今食物种类、饮食问题和医疗功效。

Abstract:Being a Yuan monograph of food and nutrition, food types, properties, dietary restrictions , medical function and diet philosophy were specified in Husihui' s Yin Shan Zhengyao( Principles of Correct Diet) , thus becoming a valuable ancient recipe and dietotherapy record to compre- hend food types, diet problem and its medical effect in post and present China.
