摘    要:鱼酱酸是典型的发酵型食品,长期以来人们对发酵食品较为注重的是其亚硝酸盐的含量,而对所含的金属物质除有益于人体健康与发育的钙以外,其他金属往往有所忽略.对鱼酱酸进行金属的测定,能更为全面的表明这是一种值得开发的、符合国家食品卫生标准的原生态食品.

Abstract:The fish sauce acid is a typical acid fermentation of food,the people has been more focused on their content of nitrite of fermented food for the long time. The addition of the metals contained in human health and development benefits of calcium,other metals are often overlooked. In this paper,the determination of metals in the fish sauce acid,can be more comprehensive that it is a worthwhile development,in line with national food hygiene standards of the original ecological food.
