预糊化淀粉的性质、特点、制备及其应用

摘    要:预糊化淀粉是一种物理变性淀粉,其主要特点是能够在冷水中溶胀溶解,形成具有一定粘度的糊液,使用方便,且其凝沉性比原淀粉小,应用非常广泛.论述了预糊化淀粉的生产工艺和方法、性质及其在食品、医药、铸造、石油钻井、养殖业、香制品行业的应用,为预糊化淀粉的开发和应用提供参考依据.

Abstract:Pregelatinized starch is a kind of physical denaturated starch. Its main characters are that it can swell and dissolute in cold water to form paste solution with a certain viscosity. It' s widely used because of its convenience and its retrogradation smaller than its raw starch. The article develops the production process and method of pregelatinized starch, its nature and its uses in industries of food, medicine, casting, oil drilling, livestock breeding, incense products so that it can offer reference frame to develop and apply pregelatinized starch, starch, modified starch.
