摘    要:文章以新鲜双孢菇为原料,将双孢菇装于浅型塑料托盘,用不同开孔面积(开孔面积分别为0、18.8、75.4和169.6mm2)的10μm PE保鲜膜覆盖包装,并于2℃下冷藏.在20天的冷藏期间测定了不同的包装形式对双孢菇微生物、失重率及外观色泽等的影响,结果表明:适当的开孔(75.4mm2)有利于防止包装内凝水的形成以及过多的水分损失,并且降低了微生物的生长速度、较好地保持了双孢菇的贮藏品质.

Abstract:Fresh mushrooms(Agaricus bisporus) were packaged in plastic trays and sealed with 10 μm thick perforated PE film.The perforation areas were 0,18.8,75.4 and 169.6 mm^2 respectively.Mushrooms were stored at2 ℃,with the microbial population,the weight loss and the color changes of mushrooms measured during the 20 days of cold storage.The results showed that the proper perforation(75.4 mm^2) is helpful to the prevention of the formation of the condensed water on the inner surface of the package and excessive water loss,and it also helps slow down the microbial growth speed so as to better keep the storage quality of mushrooms.
