摘    要:板栗所含的营养成分丰富且具有较高的生理功效,板栗产品风味独特深受国内外消费者青睐。然而鲜板栗易霉烂变质、生虫不耐保存,板栗加工产品存在老化和变色现象,许多产品没有形成规模化、产业化。提高板栗制品的保质期,充分利用板栗资源进行创新和改造,市场潜力巨大,前景广阔。

Nutrition,Production Status and Prospect of Chinese Chestnut

Abstract:Rich in nutrients and high physiological efficiency,chestnut products are popular among domestic and foreign consumers. However,fresh chestnuts easily get rotten and cannot be kept for a long time. In chestnut processing,such phenomena as aging and discoloration often happen. Many kinds of products have not formed the scale economy. We should improve the shelf life of chestnut products,make full use of chestnut resources for innovation and transformation. Therefore,the market potential is tremendous and foreground.
