| 摘 要： | 《食品化学与分析实验技术》是食品科学与工程、食品质量与安全专业的主要专业基础课之一。文章对食品化学与分析实验技术教学改革进行了探索和实践。通过教学改革，调整与优化了实验内容，提高了学生的主动参与性，完善了实验考核方式，培养了学生的科学研究与创新能力．但改革过程中也出现了一些新的问题，如大型仪器如何开课，如何让学生参与课前准备等。

Teaching Reform and Practice in Experimental Technology of Food Chemistry and Analysis |

| Abstract: | Experimental technology of food chemistry and analysis is the major basic course of profession of food science and engineering and food quality and safety. Experiment teaching reform was explorated and practiced in this paper. Experiment content was adjusted and optimized; student＇s active participation was enhanced; experimental evaluation methods were improved and student innovation ability was fostered through the reform. But some new problems emerge in the reform process, for example how to use instrument and how to involve students in pre-class preparation. |
