光唇鱼肌肉营养成分与品质的评价

摘    要:对光唇鱼(Acrossocheilus fasciatus)的合肉率和肌肉营养成分进行分析,结果表明光唇鱼的含肉率平均为59.59±2.81%,肌肉(新鲜)的水分含量77.69±1.02%,粗蛋白含量19.21±0.02%,粗脂肪含量0.54±0.05%,灰分1.01±0.03%;脂肪酸为12种,饱和脂肪酸(SFA)4种,不饱和脂肪酸(UFA)8种,其中单不饱和脂肪酸(MUFA)4种,多不饱和脂肪酸(PUFA)4种;肌肉中含有17种氨基酸,总量为69.28%(干重百分比),7种人体必需氨基酸总量是28.98%,4种鲜味氨基酸含量为28.01%,必需氨基酸指数(EAAI)是59.56:测得矿物元素8种。

Abstract:Nutritional components in the muscle of Acrossocheilus fasciatus were tested and analyzed with routine methods in order to evaluate its nutritive value and offer basic data and theoretical basis for feeds research. Samples of 26 wild individuals were collected from Oujiang in October of 2006. The results showed that the contents of crude protein, crude fat, moisture and crude ash of the fresh muscles were( 19.21±0.02)%, (0.54± 0.36)%, (77.69±1.20)% and( 1.01±0.21 )%,respectively. 17 common amino acids and 8 essential amino acids for human needs was found in muscle. In dry sample,the total content of amino acids was 69.28 % , the content of essential amino acids was28.98%,and the percentage of essential amino acids in total amino acids was 41.83 %. The essential amino acids index (EAAI)was 59.56. It was apparent that the content of the different amino acids was stable and the constitutional rate of the essential amino acids in general accorded with the FAO/WHO Standard. In dry sample, the content of four delicious amino acids was 28.01%. The contents of DHA in fatty acids were 22.34%,which were higher than some other economic fish. The composition of trace element s in the muscle of Acrossocheilus fasciatus was reasonable. It was indicated that Acrossocheilus fasciatus is one of the fresh water fish with good edibility value and nutritive value, worthy of exoloitation and utilization.
