文化视野下的中西烹饪比较研究

摘    要:中西烹饪风格的不同背后隐藏的是文化的差异。文化视野下的中西烹饪表现出不同的哲学思想,"和"思想与个体主义,是整体性与个体性的差异;中式烹饪是感性的,西式烹饪是理性的,这就形成了以经验性为主的中式烹饪方式和以机械性为主的西式烹饪方式的差异。学习和借鉴西式烹饪,有利于创新中式烹饪文化,加快中式烹饪的发展步伐。

Study on the Comparison Between Chinese and Western Cuisine from a Cultural Perspective

Abstract:Chinese and Western cuisine have quite different styles, and have formed two distinct types of Chinese and Western-styled food. They imply different culture, and there is an obvious difference between them. Chinese and Western cuisine viewed from a cultural perspective display different philosophical ideas, "harmony"versus individualism, or the difference between the whole and the individual. Chinese cuisine is about sensibility and the Western cuisine is about sense. They have formed the differences between the Chinese cooking methods based mainly on experience and the mechanical Western cooking methods. So we should learn from Western-styled cuisine, innovate the Chinese cuisine and accelerate the pace of the development of Chinese cuisine.
