摘    要:研究药(食)用真菌不同发酵菌种与女贞子固体发酵后对齐墩果酸的影响,为深度开发利用药(食)用真菌和女贞子提供基础研究.选用四种不同药(食)用真菌对女贞子进行固体发酵,用HPLC法检测女贞子药材和四种女贞子固体发酵物中齐墩果酸的含量.结果表明,四种女贞子固体发酵物中,齐墩果酸均未发生转化;灵芝菌和桑黄菌可显著增加女贞子中齐墩果酸的含量,含量分别提高12.00%和38.17%,而平菇菌和姬松茸菌则减少了女贞子中齐墩果酸的含量,含量分别降低16.25%和2.18%.由此可知,在固体发酵过程中,发酵菌种对女贞子中齐墩果酸的含量有较大的影响,因此需要根据发酵目的筛选适宜的发酵菌种.

Abstract:This paper is aimed to research the influence of different strains on oleanolic acid during solid fermentation of ligustrum lucidum,with a view to providing a basis for further developing medicinal and edible fungi as well as ligustrum lucidum.Ligustrum lucidum is respectively fermented with four different kinds of medicinal and edible fungi.The contents of oleanolic acids in ligustrum lucidum and the solid fermented products are detected by HPLC.The results show that none of Oleanolic acids in the four ligustrum lucidum's solid fermented products are transformed,and Ganoderma Lucidum and Phellinus igniarius significantly increase the content of oleanolic acid in ligustrum lucidum,by12.00% and 38.17% respectively.However,Pleurotus ostreatus and Agaricus blazei decrease the content of oleanolic acid in ligustrum lucidum,by 16.25% and 2.18% respectively.It is therefore concluded that strain has a large effect on the content of oleanolic acid in ligustrum lucidum in the course of solid fermentation,so proper strain should be screened according to the fermentive objective.
