花粉运动休闲饮料的研制

摘    要:以蛋白质提取率为主要指标,对花粉的发酵破壁提取和酶法破壁提取进行了研究.实验表明,当花粉加2.5倍水过胶体磨细化后,采用酶法提取工艺,在温度为45℃,pH为4.6的条件下,酶解30h,然后在60℃下浸泡10h,蛋白质提取率最高,效果最好.通过对花粉运动休闲饮料的调配试验,当花粉母液为20%、氯化钠为2%、蛋白糖为0.04%、柠檬酸为0.1%时,饮料的品质最佳.

Abstract:This paper studied on the methods of the fermentation extraction and the enzyme extraction with which the cell wall of the pollen was to be broken with the protein extraction rate which is as a main index.The experiment indicated that,The protein extraction rate was the highest while the pollen have been enzymolysis for 30 hours at the temperature of 45℃ and the pH of 4.6 after fine-featured within 2.5 times water and then immersing for 10 hours at the temperature of 60℃ within 10 times water.Through doing the blend experiment about the pollen leisure sports beverage, the best was when the pollen mother liquor was used in the priportion of 20%,the protein sugar was 0.04%, the NaCl was 0.2%,and the lemon acid was 0. 1% as well.
