| 摘 要： | 由于水分子的特殊结构，使水分子有很大的极性和分子问能形成氢键，有分子问作用力强、分子内聚力大的特点．因此，使水表现出了熔、沸点高，比热容大，汽化热和熔化热高，表面张力大，介电常数高等异常特性，而含有这些特性的水对农副产品的生长发育、品质优劣、风味好坏起着十分重要的作用，同时对农副产品的贮藏、加工及食品制造都有很大的影响．

| Abstract: | The special structure of water molecule makes it have great Limits and form hydrogen among water molecules. It has the characteristics of strong acting force among water molecules and powerful accumulation in molecules.Therefore,water represents the specific nature of fusion,high boiling point,high specific heat,high heat of vaporization an heat of fusion,Large tension on the surface and high dielectric constants. Water with these characteristics playsan important role in growing, quality,and flaviur of farm and subsidiary products,meanwhile,it has great influence to storing, processing and manufacturing of farm and subsidiary products. |
