摘    要:酿豆腐以其制作方法独特和古老的文化渊源在豆腐中古今独步。梅州民间故事《酿豆腐的由来》对它的起源的解释有误,酿豆腐在19世纪中叶已在花县和南京现身,它的起源当在明代。从酿豆腐中可以发现它有古老的历史、客家传统和客家心理等文化根基,酿豆腐的文化意义大于其饮食价值,客家在人生实践中通过酿豆腐等事物与自己的传统根基和本原文化连接,它有重要的饮食和文化意义。

Abstract:Stuffed tofu is famous for its unique production method and ancient cultural origins.Meizhou folk tale "The Origin of Stuffed Tofu"has a wrong interpretation of the origin,as stuffed bean curd in the 19th century has appeared in Hualounty and Nanjing County with its origin of the Ming Dynasty.Stuffed bean curd has a long history.Hakka traditions and cultural roots,so diet significance of stuffed tofu is less than the value of cultural significance.The Hakka stuffed tofu has some relations with Hakka traditional roots and primitive culture.It has important dietary and cultural significance.
