大豆卵磷脂中脂肪酸组成分析

摘    要:采用气相色谱法测定大豆卵磷脂中脂肪酸的组成和含量,采用面积归一化法确定各脂肪酸含量;结果表明,大豆卵磷脂中含有4种脂肪酸:棕榈酸(16.5%)、硬脂酸(4.2%)、油酸(12.1%)、亚油酸(59.2%);亚油酸在大豆卵磷脂中的含量最高。

Abstract:To study the composition and concentration of fatty acids in soybean lecithin.The fatty acids were detected and analyzed by GC.Four fatty acids were indentified,main components of them were palmitic(16.5%),stearic acid(4.2%),oleic acid(12.1%),linoleic acid(59.2%).The content of linoleic acid were the highest in fatty acids in soybean lecithin.
