谷朊粉水解物微波辅助螯合锌工艺研究

摘    要:为优化谷朊粉水解物与锌的螯合工艺,以谷朊粉水解物为原料,七水硫酸锌作为锌源,通过单因素实验与正交实验研究了谷朊粉水解物与锌离子质量比、微波螯合时间、微波螯合功率、反应液p H对螯合反应的影响。经研究确定最佳螯合条件为:微波螯合功率为350W,微波螯合时间为8min,谷朊粉水解物与锌离子质量比为3∶1,反应液p H为8.0,该条件下螯合率为74.2%。

Abstract:The chelation process of gluten hydrolyzate with zinc was optimized by single factor design and orthogo-nal experiment. The effect of the mass ratio of gluten flour hydrolysates to zinc ,reaction time,microwave power, and pH value on chelate reaction was investigated. The optimum condition was obtained as follows:microwave power was 350 W,radiation time was 8 min,the mass ratio of gluten flour hydrolysates to zinc was 3:1,the pH value was 8. 0,and the chelated percent was 74. 2 % under the reaction condition.
