从生产腐乳废渣中提取水不溶性膳食纤维研究

摘    要:本文对腐乳厂生产腐乳的废渣进行再利用研究,主要采用化学法、酶法、酶与化学结合法从废渣中提取水不溶性膳食纤维,并对这三种方法所得产品进行分析比较。研究结果表明,采用酶与化学结合法得到的水不溶性膳食纤维产品纯度最高、生理活性最好,产率为29.2%,持水力为7.1g/g,膨胀力为3.8ml/g。

Abstract:The paper summaries a research about the re-utilization of waste residues of produced fermented beancurd in Guilin Fermented Beancurd Factory. Water-insoluble dietary fibre can by extracted with three methods--chemical method, enzymatic method and a combined method of chemical and enzyme. Comparison shows that the third method yields the puret fibre with the best physiological activity, the production rate being 29.2%, the water holding capacity being 7.1g/g, and the expansion bing 3.8ml/g.
