红菇多糖体外抗氧化活性的研究

摘    要:用热水浸提法提取红菇多糖,采用Fenton反应法,还原能力测定法以及盐酸萘乙二胺比色法等几种实验方法研究了红菇多糖的体外抗氧化活性,并与VC的作用进行了比较。结果:红菇多糖对·OH具有良好的清除作用,当浓度增加到600μg/mL以上时,效果优于VC(P〈0.01),浓度增加到800μg/mL时,清除率达到最大,为(77.66±1.33)%。红菇多糖对Fe3+具有一定的还原能力,浓度为125μg/mL时的还原能力与3.75μg/mL的VC相当。红菇多糖对NO2-也有清除能力,浓度增加到375μg/mL时,清除率达到最大(45.30±2.58)%;但后二者作用都较VC弱。

Abstract:Polysaccharide was extracted from Russula Vinosa by hot water extraction technology. Antioxidant activities of Polysaccharide from Russula Vinosa were measured by several experiments,including the Fenton method, the reducing power measure and the Saltzman method of eliminating of NO2- in mimic gastric juice. The antioxidant activities of VC and Russula Vinosa Polysaccharide in vitro were compared at the same concentrations. The result showed that the hydroxyl radicals (·OH) is efficiently eliminated by Russula Vinosa Polysaccharide. For the capacity of scavenging hydroxyl radical,Russula Vinosa Polysaccharide shows superior to VC when the concentration is above 600μg/ mL,. When the concentration is 800μg/ mL, Polysaccharide shows strongest. The Russula Vinosa Polysaccharide has antioxidant properties in vitro. The reducing power of 125μg/ mL Polysaccharide is similarly equal to3.75μg/ mL VC. The Russula Vinosa Polysaccharide could also eliminate nitrite in mimic gastric juice. When the Polysaccharide concentration is 375μg/ mL, the reducing power is(45.30±2.58)%, but lower than VC.
