清代叙州府“荔枝酒”考

摘    要:唐宋时戎州"重碧酒"、"荔枝绿"、"绿荔枝"都是经过多重酿造的发酵黄酒,而不是用荔枝酿成的果酒。清代的叙州府公馆坝既产优质曲酒,又是"绿荔枝"酒典故的产生地。处于水陆交通重要节点上的清代公馆坝糟坊头酿酒作坊用明代古窖,使用独特酿造工艺酿制的杂粮酒享誉岷江、长江沿线,而这种杂粮酒就是康熙时受到江宁织造曹寅高度赞誉的皇家贡酒"荔枝酒"。这个结论不仅可以从文献中得到证明,而且还得到考古和现代微生物技术的证实。

Textual Research on "Litchi Wine" in Xuzhou Fu in Qing Dynasty

Abstract:The wines such as "Chongbi Wine","Litchi-Green" and "Green Litchi" are fermented yellow rice wines after several-times making,not the fruit wine made by the litchi.The place Gongguanba in Xuzhou Fu(an official residence) in Qing Dynasty not only makes quality Luzhou-flavor liquor,but also makes "Litchi-Green" wine with its place of the original literary quotation.Located on the joint of shipping and communication,the leading wine workshops with first productions of wine in Gongguanba in Qing Dynasty uses the ancient wine cellar in Ming Dynasty,and their cereals wine with unique making skills and techniques becomes famous along Minjiang River and Yangtze River areas.The cereals wine is the royal tributary wine named "Litchi Wine" highly introduced by Cao Yin,an officer in Emperor Kangxi period.The conclusion is not only from some literatures as evidences but also from the evidence in archaeological studies and modern microorganism technology.
