微山湖麻鸭及其蛋肉制品开发研究进展

摘    要:微山湖麻鸭至今已经有300多年的养殖和加工历史,1978年被列入全国地方家禽志,2009年制订了地方标准.传统的蛋肉制品主要是"荷香妙龄鸭""分割鸭""白条鸭""龙缸松花蛋""熟咸蛋""松花蛋""味蛋".现代制品主要是"五香扒鸭""盐水鸭","烤鸭".今后的发展趋势是冷却肉与分割肉、板鸭、麻鸭火腿、多味炖鸭肝片、香酥麻鸭、熏鸭排、鸭肉片、鸭肉串、鸭肉丸、麻鸭肉松、麻鸭肉干、麻鸭肉脯、鸭毛纤维.

Abstract:The history for breeding and processing the Weishan Lake Sheldrake is more than 300 years in China.In 1978,the Weishan Lake Sheldrake was included into the Record Book of China's Regional Poultry and in 2009 the relevant local standards were established.The traditional processed products for the Weishan Lake Shelddrake include "duckling braised in lotus leaves",duck segments,harslet-removed duck,pidan,preserved duck egg,etc.,and the modern products include spiced duck,salted duck,roasted duck,etc.In future,the development trend will focuse on segmented and frozen duck,pressed salted duck,bacon duck,braised duck livers,fried duck,duck slices,duck shashliks,crushed dried duck,duck jerky,fried duck crisps and duck feather fiber,etc.
