| 摘 要： | 抗氧化剂在食品、医药行业有着广泛的用途而深受关注。长期服用一些化学合成的抗氧化剂会引起身体的病变，而传统的生物抗氧化剂的抗氧化效果一般。近年来，肌肽作为一种新的高效低毒的生物类抗氧化剂日益得到关注。本文主要介绍肌肽的抗氧化性质，及其在医药方面的应用。

| Abstract: | Anti-oxidant has been attracting much attention because of its many important applications in food and medicine. There are some pathological changes in human bodies by taking chemical anti-oxidants after a long time. And some bio-anti-oxidants are not strong in the effect of anti-oxidant. In recent year, we pay much more attention on carnocine because of its high effect and low toxicity. In this article, we introduce something about carnosine. It's about the characterization of anti-oxidation, and about the application in pharmaceuticals. |
