切片土豆干燥中传质过程模拟与分析

摘    要:建立切片土豆内部传质模型,内部传热模型来研究土豆干燥过程的传质模拟,并进行了实验验证,验证结果表明:用整个物料平均水分来间接验证,模拟值和实测值十分接近,二者的最大相对偏差小于9.1%,模拟结果表明:土豆片表层水分在热风的作用下得到蒸发,水分下降很快,在表内水分差作用下内部水分向表层迁移,干燥过程中产生表低内高水分分布规律。

Abstract:Internal moisture diffusion process is the base of the study on simulating drying mechanism and drying technology. The moisture diffusion process within potato slice is systematically studied, and mathematical models of moisture diffusion within potato slice are developed. The moisture diffusion process during drying period is studied, the third boundary condition model is developed. Application was made and predicated results agree with the experimental data on the whole.
