| 摘 要： | 大豆富含许多对人体健康有益的生理活性物质，如大豆异黄酮、大豆皂甙、大豆磷脂、大豆多肽、大豆膳食纤维、大豆低聚糖等，具有多种生物学和药学性质，被广泛应用于食品、医药、化妆品和饲料等行业中，具有广阔的研究与开发前景。本综述了大豆中主要功能性因子的特性、结构、功能及其开发应用。 |

| Abstract: | Soybean is rich in many bioactive materials, such as soybean polypeptide, soybean oligosaccharide, soybean phospholipid, soybean isoflavone, soybean fiber, and soyasaponins, each of which play an important role in the health of human beings. They boast of different physiological and pharmacological properties, and are extensively applied in food, medicine, cosmetic, and feed industries, etc. In this paper, the properties, structures, functions, as well as exploitation of these functional factors are discussed. |
