摘    要:疏水蛋白是由丝状真菌分泌的具有特殊性质的蛋白质,在真菌的生长和繁殖中起着非常重要的作用.其最显著的物理特性即能够在亲水-疏水界面通过自组装形成具有两亲性的薄膜使其拥有非常广阔的应用前景.因此有关疏水蛋白自组装方面的研究受到科技工作者的广泛关注.

Abstract:Hydrophobins are small proteins produced in filamentous fungi,which are one kind of bio-surfactants with extreme surface activity.Hydrophobins play multiple important roles in fungal growth and development.These secreted proteins have the ability to self-assembly into an amphipathic protein membrane at hydrophilic/hydrophobic interface so that they have been suggested for a wide rang of applications such as in biomedical,food,personal care and etc. The study about the self-assembly of hydrophobin are interested by scientist.
