摘    要:生产纯生啤酒的关键是防止有害微生物的污染,从生产的各个环节入手进行微生物的管理和控制,通过纯种酿造、无菌过滤、无菌包装等技术,以保证啤酒的微生物安全,进而稳定纯生啤酒的质量和风味。

Abstract:Preventing microbial pollutions is a key processing procedure in the production of draft beer. The management and control of microbial contamination is base on the control points during the production process. Through pure breed brewing, aseptic filtration and aseptic packaging technologies, achieve sort of microbial safety of draft beer production, and stabilize quality and flavor of draft beer.
