以红枣、苦荞茶为主要原料,研制出一种集营养、保健为一体的复合型茶饮料,提高苦荞茶的利用率,丰富茶饮料产品类型。以红枣汁、苦荞茶汁、绵白糖、柠檬酸的添加量作为影响饮料感官特性的四大因素进行单因素试验,再通过正交试验确定复合饮料的最佳工艺配方。结果表明：红枣汁30mL、苦荞茶汁70mL、绵白糖7g、柠檬酸0．15g、β-环状糊精0．5g时,复合饮料色泽风味最佳,组织状态均匀无沉淀,透明度高,稳定性好,具有成熟红枣和苦荞茶特有的香气和风味。产品的总糖含量≥9％,总酸（以柠檬酸计）为0．02％-0．10％,无异味．酸甜可口。 相似文献

以云南蒙自解放钟枇杷(Eriobotrya japonicaLindl.‘Jiefangzhong’)为原料制备枇杷汁,并测定其中的总糖、总酸、维生素C、胡萝卜素等营养成分。通过营养成分和多酚氧化酶活性的比较,选择出对枇杷汁护色效果较好的方法,为枇杷汁饮料加工提供技术指导。结果表明,蒙自解放钟枇杷的总糖含量79.5mg/g、总酸2.99mg/g、维生素C0.05mg/g、胡萝卜素0.01mg/g。其中20%的柠檬汁和1%的食盐混合浸泡20min的护色效果最明显。加入果胶酶160mg/kg,在38.7℃下处理4h-5h为最佳的酶解时间。枇杷汁的最优配比是枇杷原汁为20%,蔗糖含量为7.2%,柠檬酸含量为0.45%。 相似文献

以莆田本地枇杷为原料,通过单因素试验探讨了抗氧化剂与冷却速率对枇杷果汁护色的影响,运用正交试验方案优化浓缩汁加工工艺。结果表明,添加0.1%维生素C+0.005%焦亚硫酸钠对枇杷果汁护色效果最佳,选择冷却水温度15℃,流速1m/s时,可以达到很好保持枇杷果汁色泽效果;真空低温三效浓缩的最优工艺参数为真空度-0.07MPa,蒸发温度50℃,流量3000L/h。 相似文献

目的:探讨澄清型桑果汁贮藏期间酚类物质的变化规律,明确沉淀形成的主要物质基础。创新点:首次研究了桑果汁贮藏期间上清和沉淀中酚类物质的变化规律,阐明了酚类物质参与桑果汁沉淀形成的机制,明确了花色苷是沉淀形成的主要物质基础。方法:对贮藏期间桑果汁的上清和沉淀进行了分离,提取了游离态和结合态多酚,对总酚含量的变化进行了研究,并采用高效液相色谱法和高效液相色谱质谱联用法对酚类化合物的组成进行了定性和定量分析。结论:随着贮藏时间的延长,桑果汁的沉淀量逐渐增加(图1),果汁上清液和沉淀游离酚的总酚含量逐渐下降,而沉淀结合酚则呈现上升趋势(图2)。上清液和沉淀中游离态花色苷分别从938.60和235.60 mg/L下降到2.30和1.74 mg/L(表2),上清中黄酮类物质也有所下降,而沉淀中结合态的没食子酸、原儿茶酸、咖啡酸和芦丁的含量则呈上升趋势(表2)。桑果汁贮藏8周后,沉淀中的花色苷占酚类物质总量的67.2%(表2)。综上所述,酚类物质参与了桑果汁沉淀的形成,其中花色苷起主要作用。 相似文献

建立黑果腺肋花楸果制剂中有效成分的含量测定方法,并对制剂清除亚硝酸盐的能力、抑制脲酶、α-葡萄糖苷酶、胰脂肪酶的活性进行考察.采用紫外-可见分光光度法对颗粒剂中的总黄酮、原花青素、花色苷和多糖进行含量测定及方法学验证;用半数浓度(IC50值)作为指标来评价颗粒剂的不同体外活性.实验结果表明,两种颗粒剂均在显色前360 min内和显色后60 min内有良好的稳定性,重复性和精密度良好,加样回收率为98.63%～102.50%和98.27%～103.00%,且RSD<2.0%,建立的方法可满足含量测定要求.3批黑果颗粒剂和双果颗粒剂中总黄酮、原花青素、花色苷、多糖的含量平均值分别为7.27、14.10、1.56、473.95 mg/g和12.35 mg/g、3.44 mg/g、0.80 mg/g、700.12 mg/g.体外活性实验表明两种颗粒剂均具有一定的清除亚硝酸盐能力,抑制脲酶、α-葡萄糖苷酶和胰脂肪酶活性的能力.且建立的4类有效成分的含量测定方法,具有较好的重复性,回收率符合要求,可用于黑果腺肋花楸果制剂中总黄酮、原花青素、花色苷、多糖的含量测定,能为评... 相似文献

对美人梅叶片花色苷的稳定性进行研究,结果表明:花色苷在高温(100℃)条件下稳定;紫外光、直射光对花色苷具有增色作用;在pH1~3的环境下花色苷颜色较为稳定;氧化剂Vc,H2O2,Na2SO3对花色苷影响较大,而还原剂无影响;Fe3+,Ca2+,Cu2+,Zn2+对花色苷有增色效果,并以Fe3+效果最好,Ca2+,Cu2+,Zn2+次之,而Mg2+与Na+对花色苷无影响;葡萄糖、柠檬酸和蔗糖均对花色苷也有增色作用。 相似文献

以山菠菜、蔗糖、异抗坏血酸钠和β-环状糊精为辅料,利用保加利亚乳杆菌与嗜热链球菌发酵生产新型酸乳。确定最佳工艺参数为：加糖量9%,提取山菠菜汁的料液比1：10,添加量25%。证明了该酸乳具有较好的抗氧化能力：达到50%清除率的酸乳上清液添加量和0.2 mg·mL-1的Vc分别为,羟自由基：1.2 mL和2.0 mL;氧自由基：3.5 mL和0.8 mL;DPPH自由基：1.3 mL和1.8 mL;对于硝酸盐的清除作用则表现明显的低添加量下酸乳提取液优于Vc,而添加量大于2.5 mL时,Vc的效果好些。 相似文献
