菠萝蜜籽是加工食用菠萝蜜后的副产物.为开发利用菠萝蜜籽的新途径,用菠萝蜜籽粉代替部分面包专用粉制作面包,探究菠萝蜜籽粉、水、糖粉、食盐添加量对面包的感官品质及比容的影响.通过单因素试验和正交试验,确定菠萝蜜籽粉面包的最佳工艺配方为:面包粉149 g,菠萝蜜籽粉6 g,水添加量为面包粉和菠萝蜜籽粉总量的50%,糖粉添加量为22%,植物油16%,鸡蛋10%,奶粉10%,酵母1.1%,食盐0.8%,改良剂0.6%;焙烤时的上火温度185℃,下火温度160℃,时间15 min.按此工艺配方制备的菠萝蜜籽粉面包,其感官品质较好,且优于普通面包. 相似文献

为提高馒头的营养价值,制作符合大众口味的杏鲍菇南瓜馒头,研究了添加杏鲍菇粉和南瓜粉对馒头品质特性的影响.首先进行单因素试验,研究全面粉馒头的搅拌时间、发酵时间、醒发时间和加水量对馒头品质的影响,确定馒头制作的最佳基础工艺,然后在小麦面粉中添加杏鲍菇粉和南瓜粉制作馒头,研究杏鲍菇粉和南瓜粉的添加量对馒头品质特性的影响.结果表明:杏鲍菇南瓜馒头制作的最佳基础工艺为:面粉95 g,杏鲍菇粉2 g,南瓜粉3 g,加水60 g、酵母粉1 g,搅拌7 min,32℃、85%RH环境下发酵50 min,室温条件下醒发15 min,然后汽蒸20 min. 相似文献

目的:以面粉、紫薯泥作为原料,酵母、白砂糖、起酥油等为辅助原料制作紫薯泥吐司面包。方法:以感官评价为指标,在单因素试验的基础上,采用正交试验设计对紫薯泥吐司面包的配方与工艺进行优化。结果:确定其最佳配方为:紫薯泥添加量20%,酵母添加量1.4%,白砂糖添加量16%,起酥油添加量4%;最佳工艺条件为:发酵时间60min,醒发时间60min,焙烤时间21min。结论:通过重复验证试验,在此优化配方与优化工艺条件下制作的紫薯泥吐司面包具有瓤心紫色均匀,口感柔软香甜,具有紫薯特殊香味。 相似文献

以大红袍茶和奶粉为原材料,制作大红袍奶茶。基于单因素试验,明确制备大红袍茶汤的最佳工艺,并确定大红袍奶茶配方的参数范围。在单因素试验的基础上,采用L9(34)正交试验优化大红袍奶茶的工艺配方。试验结果表明,大红袍茶汤制备最佳工艺为：茶汤浸提温度85℃、二次浸提时间5min+4min、茶水比1：80。大红袍奶茶最佳配方为：牛奶60ml、白砂糖4g、茶汤25ml。 相似文献

Word is the smallest, independent, meaningful linguistic unit of language. It can well reflect the national and historical characteristics. From synchronic aspect, the social and cultural influence on word meaning is mainly embodied in conceptual and associative meanings of word. The incorrespondence of word meaning is a phenomenon that exists in both conceptual and associative meanings of word among different languages. From diachronic aspect, the development of social culture causes some changes of word meaning to some extent.
