直投式发酵剂制备几种泡菜的研究   总被引:1,自引:0,他引:1  
文章以乳酸菌发酵剂进行黄瓜、胡萝卜、莴笋泡菜的制备.利用植物乳杆菌B4、复合弯曲乳杆菌A8和乳酸链球菌制备直投式发酵剂并进行纯种发酵泡菜,与自然发酵泡菜从感观指标、pH值、活菌数量、可滴定酸含量、亚硝酸盐含量等指标进行比较.结果表明,采用直投式发酵剂可提高发酵3d时泡菜汁中的细菌数量;提高几种泡菜中可滴定酸含量;亚硝酸盐含量低于0.27mg/kg;缩短发酵周期至3d,且对几种泡菜的感观指标无明显影响.  相似文献

两株乳酸菌的分离鉴定及产酸性能的研究   总被引:5,自引:0,他引:5  
从泡菜中分离筛选出两株乳酸茵Lactll和Leull,根据形态特征、生理生化特性进行初步鉴定,并选取室温(白天20℃左右,晚上12℃左右),25℃,37℃三种温度对两株乳酸茵进行培养,通过定时测定两株乳酸菌在三种不同温度下的pH值来考察不同乳酸菌的产酸性能.经初步鉴定,两菌株分别为短乳杆菌、乳球菌.对这两菌株产酸性能的测试结果表明.两株乳酸菌在37℃下培养产酸速率快,同一温度下培养,Leull产酸速率大于Lactll.  相似文献

目的:前期研究发现植物乳杆菌ZJ316能显著抑制病原菌,促进仔猪生长,提高猪肉质量等,本研究拟在ZJ316全基因组测序的基础上,运用比较基因组学手段揭示与其生境适应性及益生特性相关基因。创新点:首次从基因水平上分析与植物乳杆菌ZJ316的生境适应性、抑菌活性及益生特性等相关的基因,为进一步揭示其生理功能打下基础。方法:运用BLASTN、Mauve和MUMmer等将植物乳杆菌ZJ316全基因组序列与已测序的8个植物乳杆菌全基因组序列进行比对及分析;用CRISPRFinder寻找CRISPR重复序列。结论:植物乳杆菌ZJ316包含碳水化合物的运输和代谢、蛋白水解酶系统和氨基酸的生物合成等相关基因,具有CRISPR、应激反应、耐胆盐、粘附宿主肠壁、胞外多糖、生物合成和细菌素生物合成等相关基因。这些基因的功能是其作为益生菌的重要特征和基础。  相似文献

目的 研究干酪样乳杆菌(Lactobacillus casei)对白色念珠菌(Candida albicans)、金黄色葡萄球菌(Staphylococcus aureus)、福氏志贺氏菌2a亚型(Shigella flexneri sub.2a)、产毒性大肠杆菌(ETEC)、致病性大肠杆菌(EPEC) 等腹泻病原菌的生物拮抗作用;方法 将干酪乳杆菌分别与各种腹泻病原菌混合培养,同时将上述细菌单独培养,观察细菌的生长情况;结果干酷乳杆菌能明显抑制白色念珠菌、金黄色葡萄球菌和福氏痢疾杆菌2a亚型的生长繁殖,而对EPEC、ETEC的生物拮抗作用则不明显.  相似文献

以南瓜、牛乳为原料,进行乳酸发酵而制得的一种发酵保健饮料。确定了加工工艺参数,筛选出最优组合。试验结果表明,牛奶中加入20%南瓜汁,7%蔗糖,4%混合发酵剂保加利亚乳杆菌和嗜热链球菌(1∶1)进行培养,在42℃发酵4小时,产品风味与普通酸奶相似。  相似文献

以红富士苹果为主要原料,在单因素试验的基础上应用响应面进行乳酸菌发酵苹果汁工艺优化研究.利用嗜酸乳杆菌、嗜热链球菌、植物乳杆菌、鼠李糖乳杆菌按1∶1∶1∶1混合发酵苹果汁.结果表明:蔗糖添加质量分数为3%,苹果汁添加质量分数为30%,发酵温度为35℃,发酵剂接种质量分数为2%,发酵时间为35 h时,获得产品品质较好.其中感官评定为82.44分,活菌数为6.64×10~8CFU/m L.发酵后产品糖度和酸度均增加,此种发酵方式能够为乳酸菌发酵果汁饮品提供理论依据,为果蔬汁的发酵提供实际的使用价值.  相似文献

以鲜牛乳和新鲜葡萄汁为主要原料,添加白砂糖、抗坏血酸,采用保加利亚乳杆菌和嗜热链球菌为发酵剂,以感官、理化、微生物检测为评定指标,研究开发凝固型葡萄酸奶.通过单因素试验和L9(34)正交试验,对葡萄酸奶的主要工艺参数、配方及发酵条件进行筛选,确定最佳工艺条件.结果表明,最佳工艺配方为:蔗糖添加量6%,灭菌时间30min,葡萄汁添加量15%,Vc抗褐变浓度为5%,发酵剂接种量4%,发酵时间4.5h.根据以上配方生产出来的凝固型葡萄酸奶色泽均匀,酸甜适宜,质地细腻,营养丰富,具有葡萄特有的风味,乳香气浓郁清爽,口感香醇.  相似文献

研究了乳酸菌Lact.1对不同浓度亚硝酸盐的降解能力以及不同温度下乳酸菌Lact.1纯培养液降解亚硝酸盐的动态变化,并以豆角为原料,探讨了自然发酵和人工接种发酵对亚硝酸盐含量的影响。结果表明,一定接种量的乳酸菌Lact.1纯培养液能有效降解亚硝酸盐,其降解亚硝酸盐的最佳浓度为320mg/kg,最适温度为37℃。人工接种乳酸菌生产酸豆角能缩短发酵时间,降低亚硝酸盐含量,为酸豆角的安全生产和消费提供了理论和实践依据。  相似文献

Oil contaminated soil was collected from Huangpu River-Yangtze River estuary wetland, with the aim of isolating oil-degrading microorganisms and evaluating their ability to degrade diesel. Three bacterial strains were discovered and identified by sequencing their 16S rDNA genes, two were Pseudomonas and one was Alcaligcnes. The proper growth conditions of each bacterium were measured and presented for diesel biodegradation. Biodegradation assays revealed that the degradation rates of three bacterial strains were 42.5%, 14.6% and 15.9% in 7 d respectively. They all play an important role on the nalkanes within the range of C16-C25 components of diesel. The results indicated that the oil-degraders can adapt to degrade diesel. The bacterial strains can be used in wetland diesel pollution control.  相似文献

采用醋酸钠-抗生素分离法对超市牛奶样品进行苏云金芽胞杆菌(Bacillus thuringiensis,Bt)的分离,获得2株Bt菌株,分别命名为BtBRC-LJ1和BtBRC-LJ2。利用PCR方法对BtBRC-LJ1和BtBRC-LJ2菌株hblD和nheC肠毒素基因的分布进行检测。结果显示,这2个菌株均含有这两种肠毒素基因。  相似文献

应用高压电激法,把载有表达不同杀虫谱晶体蛋白基因的两种质粒同时转入晶体缺陷型的BT菌株,或者把载有表达单一晶体蛋白基因的质粒转入不同亚种且产生晶体的天然BT菌株中,通过生物测定法,快速而简便地筛选出杀虫谱扩大及杀虫毒力提高的重组菌株。所筛选到的菌株产生的伴孢晶体,同时对鳞翅目及双翅目昆虫幼虫有毒杀作用,并且重组菌株所产生的伴孢晶体的形状有异于其出发菌株的伴孢晶体。  相似文献

Genotypic and environmental contributions to the defensive burying response were examined by testing four sublines of two inbred strains of mice in test chambers of three different lengths. Burying was found to be dependent on both the particular subline tested and the length of the test chamber employed. For two sublines, specific increases in the length of the test chamber resulted in the complete abolition of defensive burying. A third subline never displayed defensive burying, and the fourth buried in all three chamber-length conditions. Sex differences in burying were never observed. Rather than being viewed as a species-specific defensive reaction, it was proposed that defensive burying should more appropriately be viewed as a genotypically dependent response, the expression of which is contingent on the specific environmental context in which an aversive stimulus is encountered. Apparent conflicts in the defensive-burying literature were reconciled in accordance with this interpretation.  相似文献

Fourteen behavioral measures were ranked according to their ability to differentiate performances of a wild population of mice from three domestic inbred strains. These “wildness” rankings were then analyzed for their ability to predict genetic and Genotype by Environment interactions. Genetic parameters were derived from analysis of three inbred domestic strains and their three hybrid crosses via the diallel technique of genetic analysis. Genotype by Environment interactions were assessed both as mean differences in stock performances resulting from rearing in a laboratory vs naturalistic environment and as differences in environmental variability within stock genotypes. Behavioral characters ranking high on “wildness” failed to demonstrate any unitary pattern of Genotype by Environment interactions. The diallel genetic analysis revealed many examples of additive variation but relatively few examples of dominant variation. An extremely wide range of interactions occurred between genotype and rearing environments, with “wildness” and “developmental homeostasis” concepts both failing to account for all the observed interactions.  相似文献

从楚雄采集核桃样品,进行内生真菌的分离、纯化及鉴定。以德氏孺孢、链格孢、疫霉、拟盘多毛孢和灰葡萄孢为指示菌,对分离菌株进行了抗菌活性筛选。结果显示,从核桃内生真菌根、茎和叶中共分离得到22株内生真菌,分别属于6个属,其中,青霉属和镰孢属为优势类群。抗菌活性研究结果表明,有四个核桃内生真菌菌株(青霉属2株、镰孢属2株)对链格孢有抑菌作用,且抑菌效果较明显。其中属于青霉属的cx13和属于镰孢属的cx09对多种病原菌具有抑菌作用。  相似文献
